Keegan thought the pumpkin was stinky when we opened it up. That's why he's holding his nose.
Find a small to med. sized pumpkin that will fit in your oven. Wash the outside as you would a piece of fruit. Cut off the top of the pumpkin, leaving the stem in place and wrap in foil. Gut the pumpkin, removing all seeds and stuffing. Rub oil lightly over entire pumpkin, inside and out. This is your baking dish.
Inside:
1 lb. ground hot spicy sausage
1 lb. ground lean beef or ground turkey
1 pkg. of onion season blend
Cook these 3 together until done and add:
1 can cream of mushroom soup
2 T. brown sugar
red pepper flakes to taste
salt & pepper to taste
a good dash of Worcestershire sauce
4 cups of cooked rice (wild or white)
Mix all ingredients together and stuff inside pumpkin. Place in oven and bake at 350 degrees for 2 hours. Place on a serving tray and serve.
You could also use onion and bell peppers in meat mixture with a little cumin. Just season however you want. You could also add pecans, fresh cilantro, apples, cinnamon, and/or nutmeg.
Add fake fall leaves on the serving platter and set the pumpkin on that to serve. It smells wonderful as it cooks. Hope you enjoy!
